UNICORN CAKE POPS RECIPE

INGREDIENTS:

For Cake Pops:
vanilla cupcakes, about 7 cupcakes
2 tbsp frosting, (recipe below)
1 cup white chocolate chips
10 pcs Sticks (for cake pops)
1 pack Colorful flower shape and round sprinkles
1 tbsp vegetable oil or (1-3 tsp CBS* or shortening)

For Frosting:
1 cup unsalted butter, softened
3-4 cups sifted powdered sugar
1/4 tsp table salt
1 tbsp vanilla extract
4 tablespoons milk

For Unicorn Horn:
Ready Made Fondant (you can purchase it in any baking stores)
Edible Gold metal dust
ROSE SPIRIT 50ML (cake decorators alcohol)
Black Gel Color (for the eyes)

Preparation: Improvise cake pop stand

INSTRUCTIONS:

For the Frosting:

Beat butter for a few minutes on medium speed. Add 3 cups of powdered sugar. Beat until the sugar has been incorporated with the butter. Add vanilla extract, salt, and 2 tablespoons of milk and beat for 3 minutes.

For cake pops:

In a large bowl, add cake pieces and crumble it into pieces until it becomes fine crumbs. Add in frosting a 1/2 a teaspoon at a time mix them all together. Keep on mixing until cake is moist and can easily make a ball shape, but still slightly crumbly.

Use your hands to incorporate the frosting into the cake crumbs. Use an ice cream scoop to scoop out balls of cake mixture. Using your palm, roll the mixture into a tight ball and transfer on lined tray (with parchment paper)

Repeat same process until all crumbs mixture has been rolled into balls. Stick the pop stick into each cake pop and place it back on the tray with the stick on top (inverted). Place the tray in the fridge and chill for an hour. Until the pops are hard enough.

Melt chocolate with a few chunks of CBS in the microwave (if there is no microwave use over a double boiler) and stir gently. Once the chocolate is melted, quickly remove it from heat and avoid over cooking.

(Note: Ang double broiler po ay kaldero or glass bowl or metal bowl na ipinatong sa ibabaw ng kaldero na may kumukulong tubig, ang tubig ay hindi dapat umaabot sa ilalim ng pinatong na bowl)

Dip each balls until completely coated and smooth. Add the sprinkles while the chocolate is still wet. It will harden quickly. Arrange it in a cake pop stand and let it set in a cool place.

For the Unicorn Horn:

You will need 5 small toothpick cut into half for the horn base. Slice a small size of fondant and knead and roll it on the table until it becomes an elongated thin log. the tip should be thin and the tail should be thicker.

Wrap it around the toothpick to form a horn that looks like a shape of a triangle.

Repeat the same procedure until you make 10 horns.

To make a gold dust mixture for the horn:

Alternatively you may use golden yellow gel color instead of gold metal dust.

Drop a small amount of rose spirit into the gold dust until you create a thick mixture just like the consistency of a nail polish. It should not be runny but it should be thicker in consistency.

Then using a small brush, color each horn with the golden color on all sides. Set aside and let it dry.

For the eyes: Color it with a drop of black gel color. Slice a very small size and roll it very thinly. The lashes should be thinner and shorter. Shape the eyes into a curve and follow the photo in this recipe. Use a toothpick to help you manipulate the curves and tips. Repeat the same procedure for 10 cake pops.

For the ears: Slice 1 medium ball and roll it out to shape a log slice into 20 pieces and shape it into small triangles. You can use a paper pattern for uniform shaping. Pinch the tip of the triangle to create a swirl on the ear.

*Notes:

For CBS: You can add Cocoa Butter Substitute to your melted chocolate. Other would also call it non ref margarine, or Purico (brand)

You can buy CBS in any baking supply stores like Chocolate Lovers in Cubao. CBS is the best ingredient to use in chocolate cake pops because it will enhance the melted chocolate to become easy to dip and smooth (pampalabnaw ng malapot na melted chocolate). It's the best chocolate enhancer to use.

You can Keep excess fondant in the freezer and thaw it before using back.
